Who is looking for a super quick, super healthy, super easy meal for tonight? This healthy, low calorie hug in a bowl may be right up your street! & what more, it can be made for as little as £3.20 per serving!
So here's what you'll need -
- 2 Shallots
- 2 Red Chillies
- Stem Gingers
- 1 tsp Vegetable Oil
- 2 Lemongrass Stalks
- 2-3 Chicken Breasts
- 600ml Chicken Stock
- Handful of Spinach
- 200ml Coconut Milk
- Rice Noodles
The Method -
- Gently fry 2 finely sliced shallots & red chillies. Add the ginger & vegetable oil & stir for 2 minutes.
- Add your 2 lemongrass stalks, sliced chicken breast, chicken stock & leave to simmer for 10 minutes, until the chicken is cooked. Add your spinach & coconut milk & leave to warm until the spinach wilts.
- Cook your rice noodles (according to the pack instructions) & stir into the laksa. Divide between bowls & top with some fresh coriander leaves.
