Today may be the perfect weather for a BBQ but I have a delicious recipe to share with you all for a gluten free & healthier option. I have recently come across the tastiest recipe for the perfect chilli & it's one you can swap the turkey for tofu & it's perfect for any vegan! There's not many recipes that can cater for virtually everyone nowadays.
Here's What You Need -
- 500g extra lean ground turkey
- ½ tsp salt
- ½ cup onion, chopped
- 3 cloves garlic, crushed
- 1½ cups canned diced tomatoes
- 1½ cups tomato sauce
- ¾ cup water
- ½ tsp cumin
- ¼ tsp chili powder
- ¼ tsp paprika
- 1 cup chopped kale
- 1 medium sweet potato
Here's How It's Done
- In a large skillet, brown turkey over medium-high heat, breaking it up as it cooks into smaller pieces and season with salt and cumin.
- Add onion and garlic once the meat is brown; cook 3 minutes over medium heat. Add the diced tomatoes, sweet potato, tomato sauce, water, chilli powder, paprika and salt.
- Cover and simmer over medium-low heat until potatoes are soft and cooked through, about 20 minutes stirring occasionally. Add ¼ cup more water if needed.
- Add in chopped kale, and stir until kale is wilted.
- Top with a dollop of fat-free plain Greek yogurt or sour cream!
- Enjoy!
